An engraved clock. A nice plaque. An engraved watch.
You can find most of these things at Things Remembered. Many jewelry stores will also engrave items for a small fee. Also check your local yellow pages (or yellowpages.com) for engravers and trophies.

Find out what they like…if they like reading get them a gift card to a bookstore. If they are going to be traveling…put together a basket with traveling essentials.

Have the kids from her classroom make a random collage - just let their little creative minds go. Each can make his or her own drawing, or card, or whatever thing that he or she wants to make. The teacher can put it together and present it as just an item of remembrance. It can be a really cool reminder of the randomness of children…

We had a wonderful mom put together a quilt for a retiring staff member. Each class signed a big white fabric square with fabric pens and the squares were surrounded by sashing in the school colors. Really cool if you have someone who can do something like that!
